Today I am thankful for spinach. Though I do not eat cooked spinach very often, save for the occasional serving of spinach dip or spinach mixed with collard greens, I thoroughly enjoy partaking of raw spinach mixed in with other raw leafy greens in a healthy salad. The spinach adds its own special flavor to the salad that really does make all of the difference. After all, roughage is good for the body, right? #lovebythedrop
